Skinny Gingerbread Latte Recipe (Vegan, Dairy Free, Sugar Free)

Learn how to make a skinny gingerbread latte recipe.  This also has directions to make a sugar free Starbucks gingerbread syrup recipe that you can make once and then use for several more lattes.  This has a hot gingerbread latte recipe and an iced gingerbread latte recipe.

Starbucks discontinued the gingerbread latte this year, but you can still make a gingerbread syrup for coffee recipe to make a iced gingerbread latte or a hot Starbucks gingerbread latte copycat recipe.


The syrup recipe makes two cups of syrup, so you can make several lattes with one recipe.

Yes, it's a little heavier on the ginger and lighter on the cinnamon than other holiday drinks, so it tastes like gingerbread.  It's a warm, spicy holiday drink.

What Does Starbucks Gingerbread Latte Taste Like?


The gingerbread latte Starbucks recipe tastes like a gingerbread cookie, but it doesn't have a strong molasses flavor like you'd expect.


Personally, that's fine with me.  Molasses can taste bitter sometimes, so I make this a gingerbread latte recipe without molasses.


It's warm and spicy, but it's a simple recipe with ginger and cinnamon.  


I find their drink pretty sweet.  I like making my own gingerbread syrup for coffee recipe so I can cut back on the sweetness by using less syrup and making my own gingerbread syrup sugar free.


What is in the Starbucks Gingerbread Latte?


A gingerbread latte at Starbucks has:


  • Milk
  • Brewed Espresso
  • Gingerbread Syrup  [Sugar, Water, Natural Flavor, Sodium Benzoate, Citric Acid]
  • Whipped Cream [Cream (Cream, Mono And Diglycerides, Carageenan)
  • Vanilla Syrup (Sugar, Water, Natural Flavors, Potassium Sorbate, Citric Acid)]
  • Nutmeg


I'm avoiding carageenan because it can cause inflammation in the body.  I have enough of that, thank you.


I like to make a healthy gingerbread latte at home so I can use real ingredients and avoid artificial ingredients and flavors.  I can also make a gingerbread syrup sugar free to make a vegan gingerbread latte.





Did Starbucks Discontinue Gingerbread Latte?


Yes, Starbucks discontinued this holiday drink.  If you want to have one, you'll have to make a homemade gingerbread latte recipe.


How Do You Make a Gingerbread Latte From Starbucks?


To make a vegan gingerbread latte Starbucks recipe, you'll first make a gingerbread syrup for coffee.  This makes about two cups of syrup, so you will have plenty left to make more homemade gingerbread latte recipes later.


You can also buy  DaVinci Sugar Free Gingerbread Syrup and use that instead of making your own.


Once you make the gingerbread syrup sugar free recipe, then you'll just need espresso or coffee and steamed milk or milk.  You can also top it with whipped cream and nutmeg if desired.


Vegan Gingerbread Latte Recipe


To make a vegan gingerbread latte Starbucks recipe, you will simply need to almond milk or oat milk.  Personally, I prefer oat milk to make a vegan gingerbread latte recipe.  


You can also use coconut whipped cream.  Aldi has a really good one!





Sugar Free Homemade Gingerbread Latte Recipe


To make a sugar free homemade gingerbread latte recipe, you will need to use a sugar substitute for the gingerbread syrup for coffee recipe.


You can use stevia, coconut sugar, monk fruit, or your choice of sweetener to make a gingerbread syrup sugar free.  You can also use half sugar and half substitute to cut back on the sugar.

To make a Starbucks gingerbread syrup recipe , you will need:

To make a gingerbread latte Starbucks recipe, you will  need:


  • Fresh brewed espresso - You can also use strong brewed coffee or cold brew coffee to make an iced gingerbread latte
  • Milk - Use your choice of milk.  You can use almond milk or oat milk for a vegan gingerbread latte recipe.
  • Whipped cream - Use coconut whipped cream for a vegan recipe.
  • Ground nutmeg
  • Sugar free gingerbread syrup - Use the above recipe or buy a sugar free gingerbread syrup.

Starbucks Gingerbread Syrup Recipe


  • Combine the ground ginger, ground cinnamon, water, and vanilla extract in a medium saucepan.  Heat over medium heat while stirring until it comes to a boil.
  • Remove from heat and let simmer for 15 minutes.  
  • Pour into a container and let cool.

Hot Gingerbread Latte Recipe


  • Add fresh brewed espresso or coffee and steamed milk to a mug.  Add gingerbread syrup to taste.  I recommend using 1 tablespoon to start.  
  • Top with whipped cream and sprinkle nutmeg on top.




Iced Gingerbread Latte Directions


  • Brew coffee or espresso and let cool.
  • Add ice to a cup.  
  • Pour cooled coffee or espresso and cold milk over ice.  Add gingerbread syrup to taste.
  • Top with whipped cream and sprinkle with nutmeg.


This skinny gingerbread latte recipe makes about 2 cups of syrup, so you'll have plenty leftover.  Store the syrup in the fridge until you're ready to use it. 


You can also freeze leftover syrup in a silicone ice cube tray for later.  Then let thaw in the fridge overnight or for a few hours to use.

How to make gingerbread syrup sugar free and use it in a vegan gingerbread latte.

Ingredients

  • 2 cups water (hot for a hot latte)
  • 1 1/2 cups monk fruit or stevia
  • 2 1/2 teaspoons ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh espresso (freshly brewed for hot latte)
  • 8 ounces of oat milk or almond milk (steamed for hot lattes)
  • 1-2 tablespoons gingerbread syrup
  • coconut whipped cream
  • ground nutmeg

Instructions
