One benefit to homeschooling is that we avoid many of the germs that get passed around in the schools. We haven't been nearly as sick, but we made up for it last year.
I don't have time to get sick. I can't write when I don't feel good, and then I can't get any work done.
Last year, I was in the ER on Thanksgiving and didn't feel better until January. It was late spring before I finally felt like myself again.

Elderberry Syrup Recipe With Honey

Ingredients
- 4 cups filtered water
- 2 cups dried elderberries
- 1 1/2 cup raw honey
- 1 tablespoons grated fresh ginger
- 1 teaspoon whole cloves
- 1 cinnamon stick
- 1/2 lemon
Directions
Step #1
Place the water, dried elderberries, cloves, and grated fresh ginger in a sauce pan. Squeeze the juice out of the lemon into the pan and then put the lemon in the pan.
Step #2
Bring it to a boil. As soon as it starts to boil, reduce the heat and let simmer for 45 minutes until it reduces in size by about half.
Step #3
Remove the pot from heat. Use a potato masher or the back of a spoon to mash the dried elderberries and get all of the juice out of them.
Step #4
Use tongs to remove the cinnamon stick and the lemon. Strain the elderberry syrup through a fine mesh sieve and into a glass bowl. Use the back of a spoon to smash the berries into the strainer to get all of the liquid out. Discard the berries.
Step #5
Put the liquid back in the sauce pain and stir in the honey. It should be warm enough for the honey to dissolve into the homemade elderberry syrup.
Step #6
Take 2 teaspoons of this elderberry syrup recipe with honey daily to support your immune system. Children can take 1/2 to 1 teaspoon.
If you are sick with the flu or a cold, take 2 teaspoons four times daily for adults or 1/2 to 1 teaspoon up to 4 times daily for children.
Mix with sparkling water or pour over pancakes or waffles for a new way to use your homemade elderberry syrup.
