Skinny Piña Colada Smoothie Recipe

This skinny pina colada smoothie tastes amazing, and it's good for you too.  It's made with real fruit and coconut water for a healthy summer treat.


Life is full of choices.  Of course, we'd all like to make the choice that requires the least amount of effort.  It's much easier to grab a bag of chips for a snack than to wash and cut fresh vegetables, for example.  


Luckily, not all healthy choices take more effect.  In fact, some are extremely easy to make, like switching soda for a healthy drink without sacrificing taste.

I don't drink a lot of soda, but in the heat of the summer, sometimes soda is the only thing that quenches my thirst.  I've been trying to drink tea instead.


When it's really hot, the kids like to enjoy some ice cream.  I really don't like ice cream, so I opt for this skinny pina colada smoothie recipe instead.  It's cold, quenches my thirst, and tastes amazing.


SKINNY PINA COLADA SMOOTHIE RECIPE



I don't drink often, but pina colada's are one of my favorite drinks.  Honestly, I prefer the taste more than the alcohol.


So I thought, why not just make a smoothie?  I get the taste of the drink without the alcohol and the extra sugar.


You can also add some alcohol to this smoothie recipe if you want.    It probably won't be a "skinny" smoothie, but it will be lighter than a regular drink.





This is a blender recipe, so make sure you have a good one.  I went through 2 mid range blenders from the big box store.  


They don't have a lot of power.  Even worse, they only seemed to blend the bottom of the pitcher and the top didn't fall down like it should


I upgraded to a Ninja Blender/ Food Processor.  I have a small kitchen, and this fits in the cupboard in a basket.


It does a fantastic job at blending and moving the food around.  It's a great price on Amazon, and I highly recommend it for smoothies and milkshakes.


PINEAPPLE



Instead of buying frozen pineapple, I buy pineapples when they are on sale and cut them up.  I put them on a cookie sheet to freeze, then I transfer them to a bag to freeze for later.



Freezing your own cut up fresh pineapple is cheaper, and it tastes so much better in this skinny pina colada smoothie recipe.


GREEK YOGURT OR BANANA


You can use either Greek yogurt or a banana in this recipe.  If you use yogurt, it should be from the fridge.  Freeze the banana for best results.


I don't like bananas, but it doesn't overwhelm the flavor.  If we have bananas that are going bad, I will freeze them and use them in this recipe so I don't waste them.


Using Greek yogurt gives you a little boost of protein, which is why I prefer it.


PINEAPPLE JUICE


Dole has 6 packs of small cans that are perfect for making this skinny pina colada recipe.  I could never use a whole can of juice before it went bad, so I buy the small cans.  They are shelf stable, too, so I can just keep them on the shelf.


They also have flavored pineapple drinks, so you can get a little creative with this recipe.


COCONUT MILK


I usually have coconut milk because I use it for coffee creamers and for cooking.


If you don't buy it, you can use coconut water.  Coconut water is like nature's Gatorade, and it's a great drink.  It's also shelf stable for several weeks or months.


Coconut water doesn't have as strong of a coconut flavor.  You may need to add just teensy bit of coconut extract to get the coconut flavor.

INGREDIENTS



  • 1/2 cup frozen pineapple chunks
  • 1/2 cup plain Greek yogurt or frozen banana
  • 1/3 cup pineapple juice
  • 1/4 cup coconut milk
  • Splash of rum (optional)

DIRECTIONS



STEP #1


Combine the frozen pineapple, yogurt or banana, pineapple juice, and coconut milk in a blender.  Add the rum if you're using it.


STEP #2


Blend until completely smooth, about one minute.

Pour into a cute cup and enjoy!
