Healthy Strawberry Chia Seed Popsicles Breakfast Pops

This healthy strawberry chia seed popsicle recipe make a perfect dessert or even breakfast in the summer.  You can can other fruits and berries for different flavors. 

During the school year, I work full time and homeschool three kids.  The oldest needs driven to his college classes (dual enrollment) and the middle one has autism therapy several times a week.

Since my kids are homeschooled, they are active in extra activities like scouts, theater, and martial arts.  We have plans at least 5 nights a week.

But when summer rolls around, it all stops save martial arts and one scout meeting.  That's when mom gives zero cares about schedules and most thing in general.

When I say "lazy days of summer", I truly mean it.  In the summer, swimming counts as a shower, and I don't even care if the kids are up until midnight.


We make homemade ice cream, get popcorn at the drive in, and make memories, but that doesn't mean that proper nutrition is completely gone for the summer.

I am kind of the master of sneaking healthy foods into kids.  I was doing it way before all those fancy books came out.

Autism moms are pretty sneaky when it comes to nutrition.  When your kids only eats seven foods, you learn how to make each bite count.

Popsicles for breakfast this summer?  Sure!  Mom made these healthy strawberry chia seed popsicles, and they make great breakfast pops.

Dessert?  Yep, they make a great dessert, too.  

Since strawberries are just coming into season, I made a batch of strawberry chia seed popsicles.  As fast as we are eating them, I'll be making a few more batches before the berries are out of season this year.

These healthy popsicles are so yummy, your kids won't know they are healthy.  Like most of my recipes, I'll tell you how to modify it to fit your tastes.

This is like making chia seed pudding, but you add fruit and freeze it.  If you haven't tried chia seed pudding, put this mixed berry chia seed pudding on your to make list.  It make a yummy easy breakfast.  Or try this pumpkin spice overnight oats recipe with chia seeds.

FRUIT


I made strawberry chia seed popsicles because they are in season.  I get them from the Amish, I'm not sure what they do differently, but they are the best strawberries you can buy.


Try this chia seed popsicle with other fruit and berries.  Kiwi, blackberry, raspberry, watermelon, or peach would be amazing!

COCONUT MILK


I used coconut milk because I keep it on hand.  You can buy it in cans, so it's shelf stable.  I use it in my coffee creamers, so I usually have some on the shelf.  

You could also use almond milk or even rice milk for this recipe.  It just depends on your tastes and what you have access to.

You can use coconut milk in my pumpkin spice coffee creamer or my peppermint mocha coffee creamer.

CHIA SEEDS


The star of this recipe, besides the berries, is chia seeds.  Chia seeds are packed with nutrition and healthy fats for your body.

They are high in antioxidants, fiber, omega-3 fatty acids, calcium, and iron.  The fatty acids help raise your good cholesterol.


So yes, you can enjoy these healthy strawberry chia seed popsicles for breakfast, dessert, or any time.

SWEETENER


I buy raw honey from the Amish, so I use that.  I think honey has a better flavor in this recipe, but you can also use maple syrup.  

I haven't tried these with any other sweetener.  I think stevia would also work well, but you'll have to taste the pudding before you freeze it in the molds to make sure it's the right sweetness.

POPSICLE MOLD


If you don't have a popsicle mold, you can use dixie cups and popsicle sticks.  We make a lot of healthy popsicle recipes, so I invested in the molds.

We used to have one that had the reusable sticks, but those are the things that get lost all the time.  I switched to a silicone mold that uses wooden sticks.  




Now I can take the pops out and put them in the freezer and reuse the molds to make different flavors.  


INGREDIENTS


DIRECTIONS


STRAWBERRY CHIA SEED POPSICLES STEP #1


In a medium sized bowl, combine the coconut milk, chia seeds, and honey or maple syrup.  Stir well.

Cover and place in the fridge for 2 hours.

Slice fresh strawberries.  Place a few in the popsicle mold and then spoon in the chia seed pudding mixture.  Add more berries as desired.


STRAWBERRY CHIA SEED POPSICLES STEP #4


Put the sticks in the popsicles and place in the freezer.  Freeze for at least 6 hours.  I let mine freeze overnight.

Yum!  If you used the mold with the wooden sticks, you can pop these out and put them in a separate container and make more or make a different flavor.  Now everyone gets their favorite kind.
