Burrito Bowls with Cilantro Lime Rice

This is day two of Vacation Bible School.  Since I have such a busy week, I've asked some friends to write some guest posts for me this week.  Several readers have asked for healthy recipes, so here's the second one for this week.  I really love this Burrito Bowl recipe from Ally because you can completely customize it for your tastes and diet.  You can use ground beef, chicken, or even refried beans for the protein.  Add the veggies that you want and leave off what you don't like.  Please welcome Ally to Everything Pretty!


Hey y'all!

I'm Ally and I've been blogging at Ally's Sweet & Savory Eats for close to 6 years now {crazy!}.  I'm super stoked to share a fresh, fun and somewhat healthy dish for you today.  If you are in a dinner rut, this is a good one!

We have a Mexican themed dinner once a week in our house.  My husband, kids and frankly myself included are obsessed.  It usually falls on 'Taco-Tuesday' but when I'm not quite as organized it can fall on any other day of the week.  I like to throw this meal in every once in awhile as it breaks up the monetany of the usual tacos, burritos, taco salads, etc.


And this one is healthy to boot!

You are welcome to make these however you like topping wise.  Don't like black beans?  Leave them out!  Like chopped onion?  Put them in!  Can't stand guacamole?  Pour on extra salsa instead.  Our staples usually include cheese, black beans, fresh salsa {this is our favorite}, guacamole and sour cream.

The key to this dish is the lime and fresh cilantro in the rice, it makes boring, bland rice really taste like something.  Honestly, it will remind you of the bowls at Panchero's and Chipotle.  But much cheaper, since made at home.  I always like to make a few extra bowls already prepped and ready for lunches during the week as well.  As nothing makes me happier than lunches ready to go!
